Recipe: Baked Oats
This is like healthy chocolate cake in a mug. It’s so easy to make and tastes delicious. Make oat flour by blending dry oats in a blender. Oat flour is higher in fiber and protein than regular flour, particularly soluble fiber which is known to be excellent for gut health. Oats are also ranked extremely highly in terms of satiety, making them a great choice of wholegrain for weight loss. Feel free to make this higher in protein by replacing half of the oat flour with protein powder. The arrowroot powder and applesauce work together as a vegan egg substitute. If you have neither of these ingredients you can just use one egg instead.
Ingredients (serves 1):
40 grams oat flour
10 grams cocoa powder
5 grams arrowroot powder
1/2 teaspoon baking powder
80 mL water
30 grams applesauce
1/2 teaspoon salt
Directions:
Combine all the dry ingredients in a small mug first, and then add the rest of the ingredients until a thick batter forms. Microwave on high for 90 seconds and enjoy.
